Kids, work, after-school activities, church events, meetings….sound familiar? Sometimes there is just not enough time in the day…and then you have to figure out how to whip up a healthy meal for your family that they will all eat! Seriously?
It doesn’t get much easier than grilled cheese really. Guess what? If you are using good quality cheese and bread…grilled cheese is all and all a pretty acceptable meal. I recently decided to sauté up some fresh veggies and add them to our grilled cheese sandwiches so we could be sure to get in a healthy dose of veggie love on the go. It was a success and I definitely recommend you give it a try.
The best thing about this recipe? There is no recipe. You can try this with just about any veggie & cheese combination you think your family will go for. For my version, I used an organic multi-grain bread and organic cheddar jack cheese for my husband and daughter and goat cheese slices for me (love me a little goat cheese). Then I thinly sliced mushrooms and zucchini and sautéed them in a little olive oil and salt & pepper.
*For my toddler, I chopped up her veggies more after they were sautéed. Basically, this is so I could sneak them easier…not because it was a choking hazard. If I can’t get her to try a particular veggie combination, I just make her a plain grilled cheese and give her some of her old standby peas or corn on the side. It still doesn’t add any extra time to my meal prep and I am not making 2 separate meals.
This meal takes approximately 15 minutes total and boom. Your family is fed and onto the next adventure!
