Cozy Crockpot Recipes to Get You Through the Winter

Winter is here, otherwise known as sweater and sneezing weather. On a cold and blustery evening, nothing is better than coming home and wrapping your hands around a big bowl of soup. 

Here’s a round-up of some cozy and comforting soup and stew recipes to get you through the winter season. The best part? They’re all slow cooker, or crockpot, recipes. As a working mom, I find myself relying on my crockpot more and more. Why stand over a stove, when you can set it, forget it, and head out the door.


1. Slow Cooker Sweet Potato, Chicken, and Quinoa Soup

This recipe is super simple and the sweet potatoes and quinoa help it really stick with you. The only ingredient you need to chop are the sweet potatoes – now that’s sweet! 


2. Chicken, Chorizo, and Chickpea Stew

Chorizo is one of my weakness. I could have chorizo and eggs for breakfast every day, This recipe uses only a small amount of sausage to add flavor to the other proteins. The recipe is written for the stovetop, but I made it in a crockpot and it worked out great.

I worked in the Bronx for a few years where I developed a love for black beans and rice. Basic but delicious when dressed up with the right toppings. This recipe is the soup version of that. It’s a good basic you can pump up with additional ingredients and toppings like a can of green chilis or grated cheddar cheese on top.

My mother-in-law and I have both made this soup in the last two weeks. Pinch of Yum‘s recipes never fail. I added some smoked paprika and used lemon juice to bring the flavors out a little more.

My husband and I have been trying to be a little more health conscious this month, along with most of the country… One easy trick is to switch out ground beef for ground turkey or chicken. In a chili recipe, you hardly notice a difference.

This white chili recipe is spicy, calling for a cup of salsa, 1 jalapeno, and hot sauce. Be sure to have a glass of milk on hand!
