Easy Vegetarian Cauliflower Chowder

We all have the best intentions of putting healthy meals on the table, but sometimes at the end of the day, the idea of preparing a from scratch meal is daunting! This soup recipe will stick to your bones without the extra calories and processed food additives. I even made use of this for our toddler, by picking some of the cooked veggies out before I blended it.

Easy Vegetarian Cauliflower Chowder

This easy-to-make soup is deliciously healthy and great for cold, winter nights. Switch it up with a little bacon or prosciutto if you want something with a little meat.

Ingredients
  1. 1 Yellow Onion
  2. 3 - 4 Small/Medium Potatoes
  3. 2 Carrots
  4. 3 Celery Stalks
  5. 1 16oz Bag of Frozen Cauliflower
  6. 1 bunch of Parsley
  7. 8 cups of Vegetable Stock
  8. 2 Tbs. Olive Oil
  9. *Optional Ingredients: bacon, chicken stock
Instructions
  1. Heat olive oil in large pot or dutch oven on medium (for Crockpot, set to high).
  2. Chop fresh veggies and toss in pot.
  3. Add bag of frozen cauliflower.
  4. Add stock.
  5. Cover and cook on Low for 2 hrs.
  6. Remove from heat and blend until creamy with an immersion blender (you can also carefully pour into a high power blender...but be careful not to burn yourself!)
Notes
  1. For crockpot, just toss all ingredients in pot and cook on High for 4 hrs. or Low for 8, then blend.
